茄汁煎燴大蝦 ( 4 人份量 ) |

材料

- 大蝦 1 ½ 磅
- 洋葱 1 隻
- 羗茸 1 茶匙
- 蒜茸 2 茶匙
- 油 2 湯匙

- 1 1/2 lb. prawn
- 1 onion
- 1 tsp ginger paste
- 2 tsp garlic paste
- 2 Tbsp oil

醃蝦材料

- 生粉 ( 英粟粉 ) 1 ½ 茶匙

- 1/2 white pepper powder
- 1 1/2 tsp corn starch

調味料

- 罐頭蕃茄醬汁 ( Tomatoes Sauce ) 1 罐 ( 8 OZ ) 或 大蕃茄 1 個 , 去皮去籽切碎 , 加水一杯煮 5 分鐘成新鮮蕃茄汁
- 茄汁 ( Ketchup ) 3 湯匙
- 糖 2 湯匙
- 喼汁 1 湯匙
- 麻油 1 茶匙
- 豉油 2 湯匙
- 鹽 ½ 茶匙

- 1 can (8 oz. Tomatoes Sauce) or 1 large tomato; skin removed, diced; add 1 cup water; boil for 5 minutes till ketchup formed
- 3 Tbsp ketchip
- 2 Tbsp sugar
- 1 Tbsp Worcestershire Sauce
- 1 tsp sesame oil
- 2 Tbsp soy sauce
- 1/2 tsp salt

Method |
- 蝦去殼去腸洗淨抹乾 , 用胡椒粉 , 生粉拌勻
- 加熱鑊下油 1 湯匙 , 放入羗茸 , 蒜茸 , 洋葱 , 煮約 2 至 3 分鐘 , 盛起備用
- 加熱不黏底鑊 , 下油 1 湯匙 , 放入蝦 , 煎煮至 7 成熟 , 盛起備用
- 調味料混合在碗中備用
- 鑊中放入調味料煮滾 , 再放入蝦 , 洋葱回鑊煮滾 , 即可趁熱享用

- Prawn - remove shell; de-gutted; clean; dry with paper; mix with white pepper powder and corn starch
- Add 1 Tbsp to hot pan; add ginger, garlic paste, onion; stir-fry 2-3 min. Set aside
- Add 1 Tbsp oil to hot pan; add prawn; cook till 70% done; set aside for later use
- Mix well seasoning mix; set aside
- Boil seasoning mix in pan; add prawn; add onion from 2. Mix well. ENJOY
